Kids in the Kitchen: Pigs in a Blanket

Sunshine helped me make Pigs in a Blanket for dinner tonight. It was her first time eating this and I was unsure if she'd like it or not, but she was super excited to help me make it. I didn't take any pics while we were actually making it, but here is the recipe we followed from Pillsbury.com. (I used chicken hot dogs and reduced fat crescent rolls. The recipe calls for 8, but we only made 4, so we just made the rest of the rolls as rolls.) Here is our finished product:

Mommy and Me Night #1

In honor of my baby girl turning 2 1/2 years old today, I decided we need to start having a "Mommy and Me" night once a month around the 13th of each month (she was born on July 13). We had our first one tonight and we had a blast! We went to the mall and into Build-A-Bear. Sunshine chose to create a horse that she named "Horsey" and then she picked out a tee-shirt for her; one that says Happy Birthday of all things! Heheh.... Then we rode the carousel and train at the mall too! We also got dinner together out. It was a fun night, even though she displayed some of that toddler attitude that I "love" so much! ;) I hope we can continue these nights as she gets older and that they create some great memories for both of us.

Potty Learning: Part Deux!

Sunshine has been doing GREAT with potty learning! I am so proud of her. I wouldn't say that we are diaper free during the days, but we are getting there! Each night when she comes home from school I take off her diaper and she runs around the house "neked" (as she calls it) for the evening until bedtime. She knows when she has to go and gets soooooooo EXCITED when she does! (I am sure the M&Ms, after she goes, are helping along the excitement!) The past two nights that I have taken off her diaper she has been DRY! WOW! And then she runs to the potty!! WOO HOO! This weekend I am hoping we can really concentrate on it and get it down!!!

Kids in the Kitchen: Bark

(Sunshine and I acutally made this right before Christmas, but I am just getting around to posting it now!)

We made bark candy to give out as gifts at Christmas for Sunshine's teachers; we made two flavors - strawberry w/milk chocolate and cherry w/milk chooclate. Here is a pic of our ingredients.

Sunshine tried to crush the candy using a rolling pin, but she didn't have the muscle power behind it to make then into pieces.

Then we moved onto using a small food processor to crush the candies. She helped me open each of the packages and then we crushed them all up. When I turned on the FP, Sunshine covered her ears and said, "The noise! Noise! NOISE!" We had just watched The Grinch cartoon so I have no doubt that's where that came from! LOL!

Here is our crushed candy:

Then I put the chocolate chips into a double boiler and melted them down. I spread it on to two cookie sheets lined with wax paper then sprinkled the crushed candy over it. I put the two trays in the fridge over night and TA-DA!!!! the next day we had YUMMY candy!!
